The Star Salad is a great addition that offers something completely new. The name comes not only from the beautiful green star on the Moroccan flag but it’s also named after my daughter who is a huge salad fan!
The Harissa Vinaigrette
The Moroccan flare comes from the harissa vinaigrette. Harissa is a popular Moroccan condiment where rehydrated chili peppers are boiled in water, seeded, and the stems are removed. What’s left is made into a paste with cumin, coriander and ginger.
Wild Baby Kale & Arugula
I’m excited because the salad gave me a chance to add wild baby kale to the menu. I loved its taste and texture, and I discovered an awesome combination when mixed with baby arugula. They’re both delicious, but also great sources for antioxidants and vitamins.
Garlic Toasted Pepitas
Pepitas are pumpkin seeds—they add the crunch! The pepitas come to us simply salted and we toast them with garlic here at The Mixx. Together with red grapes, pearl couscous, sometimes called Israeli couscous, sliced radish and fresh mint and you have a Moroccan-inspired meal that, I believe, is ahead of its time or at the very least, just in time!
